EPICURIOUS 2022

What is Epicurious?


Epicurious is a chefs excellence workshop designed by chefs for chefs. The inaugural MILUX Chef’s Excellence workshop is a completely new developed program of our long-standing Chef's Excellence Training. The focus of Epicurious for the MILUX Executive Chefs is based on training, culinary initiatives, product knowledge, train the trainer foundations and a laser focus on celebrating locality of destinations by highlighting local produce and culture in the luxury environment. The training itself is a combination of classroom activities, visiting production sites & producers, local market discoveries, high-end cooking demonstrations and savoring some of the finest produce from the surrounding area.


The inaugural workshop was held in Parma, Italy. Part of the Emilia-Romagna region of Italy, Parma is famed for its production of ingredients from Parma ham, Parmesan to world renown Pasta’s. With the home of our partners Barilla being based here there was no doubt Parma represented the perfect location to host Epicurious. The event was attended by 22 hand selected luxury culinary leaders from across EMEA. These leaders experienced an immersion training program focusing on the future of modern luxury in our hotels.

Understanding Global trends and the ones to come …. In addition, each chef had to research the local trends from their areas and present back to the group of attendees, sharing their understanding of current trends and trends appearing across EMEA.

Reiterating our goals as a company, global initiatives, goal setting, the way forward and be best in class examples.


CRITICAL THINKING | BRAINSTORMING

Strategic sessions for IRD, Breakfast & Executive Lounge guidelines brainstorming new ideas in these areas.


TRAIN THE TRAINER

Enhancing the Culinary Training on property and how to train the next generation. This will form part of each chefs LPA with time.


EPICUREAN’S MOMENTS

These cuisine tasting sessions helped educate the history, quality variables, production methods of local foods, e.g., Parmesan, Aceto Balsamic, Param Ham, Italian Gelato, Barilla Pasta. The pinnacle of which was a meet & great with the world renown Massimo Bottura for a private blind tasting & masterclass of Italian dining culture, street food safari, multicourse dining experience.
